I have a Soundstructure C16 with a VoIP interface UC version 18.104.22.16874. Now once I dial onto a bridge/conference and the call is connected I am unable to dial directly anything further like extensions/password via DTMF.
I doubt it has anything to do with SIP Inbound (RFC2833) or SIP INFO (RFC2976) settings or any other settings as the above scenario works perfectly using a Polycom Soundpoint IP450 over the same line and connecting to the same server/Provisioning Server.
Any help/insight would be useful.

UCS 5.0.0 is a completely outdated Software and you did not post the SPIP450 Software Version in comparison.
In order to troubleshoot this we require a wireshark trace and phone logs.
Please work with your Polycom reseller to brings this to the attention of Polycom support.
