Is there a way to increase the call log (in the .xml file) beyond 100 total calls? If not, is there a way for the phone to start a new .xml file each day or week?

The limit is documented in the admin guide and a feature request would be required to change this

I am not aware of any third party that offers this but have a look at this:
Nov 10, 2014 Question:How can I check the status of a Polycom SoundPoint IP, SoundStation IP or a VVX Phone?

A application could run on a PC gathering the data send by the phone(s)

Hello ChevyTruck,
the phone does not store anything. You need to write yourself an app or get someone to write an app for you.
You PABX or SIP switch should really keep this data and not the endpoint.
