I have tested several free call recording softwares (BOC call recorder, MP3 Skpe Recorder, Call Monitor Pro) and they all work well when using my Sennheiser USB headset as the audio source, however when I use my Polycom VVX 500 phone as the audio source the recordings are all silence.  The calls appear to be recording and the file size increases with time, but playback is silence.  I have duplicated this at two sites with Windows 10 and Windows 7.  I have tried setting the audio device  which appears in Windwows as "Polycom USB Audio Playback" as the default audio device but this did not change the recording behavior.  Is is possible to use call recording software with a VVX phone?

This is not an officially supported scenario or a tested scenario but have you used the VVX as a recording device?

I tried setting the Polycom as the default record device but same issue.
