We currently have a mixture of PBX and Lync Users, when a Lync Directory Search is performed on a non - lync user and Dial is pressed the extension will not ring as it defaults on their email address rather than the phone number data field. 

 

If the searched person is a Lync user then it will call as they have a SIP address.  

 

Is there any way to change the default data field to the phone number instead?

For your new question the answer is no. This is working as designed at present and you would have to get into the details of the contact to dial the number.
