Client interested in HDX 8000 system but is asking if they can have 3 eagle eye III cameras using a switcher in control room to connect to desired cameras. Is there a switcher available on the market to support this request.

With the right design, yes.

I would recommend they contact an integrator that is highly familiar with the Polycom products and is qualified with AMX or Crestron.

The EagleEye III cameras have a break out cable that separates the HDCI by video and RS 232 control.  The control portion can be controlled by AMX or Crestron with the modules they have to control the EagleEye cameras.  The video can be taken to a video switcher, and the output taken to the codec input.
