I have a customer who wants me to change the behaviour on 3 of their Polycom VXX 500 phones

 

What they want is for the phone to not answer calls when the handset is picked up.   They want the user to have to choose to answer the ringing line from the screen

 

Why? Because the owner wants all 30 phones in the company to ring every time there is an incoming call, but he doesn't want to accidently answer a call when he picking up his handset to place a call.

 

Anyway, I have been reading manuals all day, and can't figure out how to make the phones behave this way.   Apparently, "they used to work this way".   I am not sure when they worked that way, but I have been assured they did.
