I would like to attach a wired VVX 310 desk phone.  I can't tell if i will need an app 51 or not.  If all the app51 does is allow me to not have to move the handset off the hook to use the headset, then id rather just move the handset.  Any other equipment I would need?  Or just a headset that plugs into the RJ11 headset jack on the phone.

The picture of that headset shows that it only has a cable with an RJ9 plug. If it is compatible audio wise (since the headset jacks have different pinouts, hence the compatibility sheet), it will have no control over the phone, and you will need to press the headset button on the phone to answer/make calls.

Sorry, not really technically inclined to understand all of that...  Just need to know if I purchase something like this:

The Support Document => here <= outlines what Headsets have been tested and declared compatible.

 

Checking the above against your link does not list this manufacturer.

 

We, Polycom, cannot comment on an untested headset.
