Are you setting the Polycom Trio into ZOOM mode via :
If yes then Polycom no longer has control and this question would need to go to Zoom.
If no please clarify in detail what you are after.

Would this block a user from accessing Skype application on Trio?

these are mutual exclusive.
You can either run the Trio in Zoom Room Mode which is explained => here <= or you can run this in Skype for Business mode with a hybrid registration to Zoom. This is also explained in the above link.
This would not be the fool Zoom Room experience a s the UI does not change to Zoom.
I suggest for follow up questions you work with a Polycom reseller or Polycom support.
In order to raise a support ticket you need to work with your Polycom reseller as they need to do this for you.
End Customers are unable to open a ticket directly with Polycom support.
If this is some sort of an Internet discounter providing your MAC address or your Polycom devices serial will enable us to look up who would be able to support you. This may not be who you purchased the Polycom device from.
